I realise its a faff, but freezing the Mars Bar bits before baking really is the best practice so they don’t explode everywhere completely and utterly, but its not completely essential. However, if you can, I would 100% recommend it! My Galaxy Caramel Cheesecake is really popular with you guys, so I think you're going to LOVE these blondies. They are so simple to make and use really easy to get hold of ingredients. I'm so happy with how they turned out! There is no possibility of melted frosting, because Galaxy Brownies are gorgeous and delicious without frosting. All of the color and bling are built right into the blondie-brownie bar!

Who loves Gooey Chocolate Caramel Brownies: ME ME ME! These brownies are so good that it's bad. It's extremely difficult to walk past the box on the counter without hunching over the work surface and taking a large bite out of ANOTHER one.For the homemade brownies layer, whisk together the flour, cocoa, baking powder, salt and espresso powder in a medium bowl. Set aside.

Gluten-Free Flour Blend: I used King Arthur Measure for Measure. This is a high-quality all-purpose blend for baking that already has xanthan gum included. Other blends may work as well but I have not tested them at this time. So this started out as my base blondie recipe, it's exactly the same recipe I used for my Mini Egg Blondies (except there's no mini eggs, obvs). If you use milk chocolate, the mixture is so much thinner, and when people moan to me that their brownies didn’t bake properly, and say they switched to milk chocolate then that is why. It doesn’t work the same, and doesn’t make them nearly as fudgey. Dark chocolate is the best.In a small microwave-safe bowl, combine the chocolate chips and milk. Microwave on High until melted, about 1 minute, stopping every 20 seconds to stir. Stir until the chocolate is completely smooth. Spread the chocolate mixture over the brownies; top with the sprinkles. Refrigerate until the chocolate topping is set, about 15 minutes. Cut into 15 pieces.

I transferred half of the blondie batter into a 20cm square tin, then added two whole bars of Galaxy Caramel on top.They should be done when they're not wobbling when you shake the tin, and a skewer should come out mostly clean, not covered in chocolate. Even so, Mars Bars are the one. They are slightly underrated in my opinion, but I do adore them. For those who have never experienced the wonder that is a Mars Bar… they are nougat and caramel, coated in milk chocolate. They are delightful. When you fold the melted chocolate/butter, and flour/ cocoa powder into your egg mousse mix, you want to be as careful as you can, because if you go and beat it all in you might cause your mixture to be too runny.

Transfer half of the mixture into the prepared baking tin. Add two Galaxy Caramel bars on top of the mixture then gently spread over the remaining blondie batter. Use a large metal spoon to spread the mixture out and ensure it's even. When the chocolate mixture has melted, let it cool a bit before beating in the eggs and sugar, and then the nuts and flour. Beat to combine smoothly and then scrape out of the saucepan into the lined pan.Pinch off pieces of blondie dough and scatter randomly across the surface of the brownie batter in both pans until all of the blondie batter is used. Use an offset spatula or spoon to swirl and spread the blondie dough pieces to cover the brownie dough completely. I then added the caster sugar and this is the point where the mixture can split. I used the whisk attachment of my KitchenAid stand mixer and whisked for about 2 minutes until the sugar had dissolved. As you can see the mixture goes pale and creamy. Add the flour to the bowl and gently fold it through the mixture by hand. Mix only until you can no longer see white streaks of flour. Add the vanilla extract to the bowl along with the eggs. Beat well for 3 minutes until light and fluffy.
