This is 'proper' Prosecco, wine with real character, style and freshness, the style that caused the boom in wines from the Prosecco region in the first place but that is sadly lacking now in the cheap stuff. The Prosecco is complemented by various sparkling wine cuvées, which are composed of the many different grape varieties of the winery. Ideally, enjoy this organic sparkling wine from Italy chilled at 5 - 7°C as an accompaniment to omelette with salmon and fennel, coconut and lime fish curry or asparagus salad with quinoa. The best regions are found around the municipalities of Valdobbiadene and Conegliano, as well as around the town of Asolo. If you give it a little air in the glass by swirling it, this sparkling wine is characterized by a fascinating brilliance that makes it dance with verve in the glass.
