The Nonya Sambal Chilli (Glory Brand) provided a spicy kick that beautifully complemented the richness of the coconut milk. Over the last ten years, I’ve been lucky enough to visit Singapore with her and eat like a true Singaporean. You could start conservatively ( 1 jar) if unsure of the brand- some brands are much spicier than others and add more paste to the final broth, to taste. Now, I must tell you that authentic Laksa Paste or laksa recipe uses Lemongrass instead of lemon or lime.

I do add a cinnamon stick, star anise and kaffir lime leaf, I have them and my favourite laksa place in cairns uses them. Remove the chillies and dried shrimp from the water (it doesn’t matter if you don’t drain them completely as some water is fine). With 5 minutes left to go, add dry spices and continue to fry the mixture off gently, stirring regularly. An incredibly rich, fragrant, complex flavoured broth loaded with all the essential classic toppings.The laksa paste used to make the soup is full of aromatic Southeast Asian ingredients, such as Kaffir lime, lemongrass, galangal and turmeric root. Tofu-wise, if you can find tofu puffs (and this shouldn’t be hard – they’re fairly standard in south-east Asian supermarkets), they’re the best choice here, because, as Lee says, they soak up the gravy like a delicious sponge.

I have opted to use oyster sauce or Thai fish sauce instead of traditional shrimp paste in this recipe. Blend a batch of laksa paste in advance, then make vegetarian laksa soup for dinner in just 10 minutes. I added thinly sliced Tofu Puffs to my bowl along with the other recommended ingredients plus cilantro (I opted out of the prawns and cucumbers and laksa leaves). Laksa is a spicy noodle soup from Malaysia, also found in other South East Asian counties including Singapore and Indonesia. Sprinkle over the curry powder and turmeric, and continue to fry for 30 seconds before adding the lime leaves and tomatoes.

This hybrid cuisine blending Malaysian and Chinese food is known as Nyonya food, and laksa is one of its most famous creations. and that your mum became a fan of it too (my mum has similar dislike for spiciness) - great to hear.

Curry mee contains the same laksa soup, except that thick, yellow alkalized egg noodles are used instead.

My Japanese mother will disown me for saying this, but I am pretty sure that Laksa would be my Last Meal. While you can purchase pre-made, jarred laksa paste and add a pat to your coconut broth, we strongly recommend trying our homemade laksa recipe instead. Fine rice vermicelli noodles soak up the thick soup and is topped with shredded chicken, egg, shrimp, cucumbers and bean sprouts.
