About this deal

Defrost the frozen fruit (take out strawberries and they contain too much water and become too mushy). It’s a big move for a company founded just 18 months ago by friends Samantha Pyser and Amanda Gestetner after they discovered ‘fro-yo’ on a trip to LA. During the week, who has time for a studied, relaxed breakfast? Not me, and I would think that I’m far from alone! And while I do like to spend a bit more time preparing weekend breakfasts, I don’t go mad: I want something tasty, that looks good, that really marks out the weekend as different from the working week, but not so over the top that takes ages in the kitchen. A sundae is perfect for that.

In 2006, following the Oaktree managed funds’ acquisition of the company; Richmond was merged with German ice cream manufacturer Roncadin GmbH to form R&R Ice Cream. The company today is a leader in its sector and is well-positioned for future growth. We wish R&R every success in its new relationship with PAI.” Heat the defrosted fruit in a saucepan, and add the water. After the mixture has warmed through, spoon off some liquid into a small bowl and add the cornflour. First, make the fruit compote. This can be made ahead of time, and will keep in the fridge for a few days. The cool, sweet frozen yogurt works really well with the heat from the chili used in the dressing for the prawns. Not only that but vanilla in the yogurt and the sweetly savoury juicy prawns are a great combination too.

It was initially promoted as a low-fat alternative to ice cream, although some experts continue to dismiss this. Then along came, guess what, low-fat ice cream. Manufacturers R&R Ice Cream claimed that the new products would “offer a healthier alternative to ice cream”, and are now seeking to exploit the trend in frozen yogurt products.
