If you are making a smaller amount (like 1/2 of the recipe) warm up the cream and chocolate at the same time.

These are sticky and your hands will get a bit messy making them, so make sure you have everything ready to go before you make them! This recipe is very popular at Christmas, but I tend to make it any time I want something slightly different than just traditional chocolate truffles.

It is a funny cake mix to whip up, once everything is mixed together it turned in to a blob in the bowl. We prefer the rum balls or bourbon balls to be chewy and fudge-like, not dried out like the rum ball recipes that use nuts. Roll the truffles one at the time and roll them in the chocolate strands or cocoa powder straightaway. This recipe was easy to make , but I did not care for the taste of it; on the other hand, my husband loves these Bourbon balls and he ate 6 at one time and would of eaten the whole batch if I wasn’t standing there supervising. That photo was taken right after I made them, so they are now sitting in my freezer with the flavours melding together until Christmas.
